Curry Chickpea Couscous Burger (Vegan)

To be honest, I don’t even remember how meaty burger taste, but it’s hard to imagine that they could ever taste better than a flavorful veggie burger. What I love about them is that you can make the most exciting and colorful burger variations with veggies. Just like the one I made the other day. Colorful, sweet and spicy!

I would have loved to make homemade mango chutney for this one, but since I didn’t have the time, I used store bought chutney, which also worked like a charm. The chutney really adds the special something to this burger. My boyfriend also added some Tabasco on top and loved it!

Curry Chickpea Couscous Burger

Makes 3 burgers (sorry for the odd number :-D):

  • 3 soft buns
  • 150g canned chickpeas
  • 1 small red onion, chopped
  • 2 cloves of garlic, chopped
  • 2 tsp olive oil
  • 1/2 tsp curry powder
  • 1/2 tsp turmeric
  • 100g cooked couscous (made from about 50g dry couscous)
  • 1 tbsp flour
  • salt

Toppings:

  • 1/2 bunch of coriander
  • 3 tbs mango chutney
  • 1 tomato

Prepare the couscous with hot water and a little bit of salt and set aside. In a medium bowl mix chickpeas, chopped onion, chopped garlic cloves, olive oil, curry and turmeric and mix everything with a hand blender. Using a fork, mix in couscous and flour. Add salt to your liking. Cover a pan with olive oil (about 3 tbsp) and heat it up. Then form three patties and fry them in the pan. Place the petties on the soft buns, together with coriander, tomato slices and mango chutney and enjoy!

    Yum, these look and sound amazing/delicious! I\’ve had so many tasty veggie burgers in my life… we\’re definitely not missing out! : )
