Quick Pan Roasted Granola

It happens quite often, that I feel like eating granola for breakfast but can’t because there is no granola left in my cupboard. Bummer! But I found a simple way to make quick granola without mixing a whole batch and having to wait until it’s baked in the oven. This one takes just a few minutes and can be made in a pan!

I have a feeling that I’m the last one to find out about this easy way to prepare granola and will make a fool out of myself for posting this so please tell me if I’m wrong. But making granola in the pan is definitely an idea worth spreading!

I like to keep this granola very simple. When I make big batches of granola, I usually add oil, applesauce, vanilla and other spices, but for the quick version in the pan I found that the basics are enough to create a delicious and healthy breakfast. You can leave the oil away completely! Different nuts, seeds, oats and dried fruits/berries give loads of flavor and by adding some maple sirup the granola becomes crunchy and a little sweet. Of course you can add anything and freestyle with whatever you have at hand in your kitchen. I could for example imagine that adding some coconut fat would be great (mental post-it for next time!).

For this batch I used mainly nuts and not too many oats. Hazelnuts, walnuts, cashews, pistachios, flaxseeds and sunflower seeds – oh how I love nuts and seeds! Combine these ingredients in a pan and let it roast over medium to high heat, while stirring.

Once it starts to turn golden and smell heavenly, add about 1-2 tablespoons of maple sirup and let it caramelize a little.

Now you can fill the muesli in a bowl and add dry fruits and berries. I used raisins, goji berries and maulberries. Let it cool down a little (to let the maple sirup do its crunchy work on the oats) and then add a cold nut milk of your choice.
