Tasty Thai Noodles

Hello friends! Today I cooked a really nice Thai noodle dish. I still had two red peppers in the fridge, that were just sitting and waiting to be cooked, so I skipped through the BBC cookbook “101 Veggie Dishes” to look for a red pepper dish. The one called Tom Yam Noodles sounded super good, easy to make and healthy, so I chose it. I changed the recipe a little (for example I used green curry instead of red curry), so I’m not sure if I could still call it “Tom Yam Noodles”, but it was for sure a bowl of really tasty Thai noodles!

Tasty Thai Noodles with Vegetables

 

For 4 servings you’ll need:

  • 2 tbsp sunflower oil
  • 2 small onions, chopped
  • 4 garlic cloves, chopped
  • 200g mushrooms, sliced
  • 2 red peppers, seeded and sliced
  • 4 tsp green curry paste
  • 1 liter vegetable stock
  • 2 tbsp soy sauce
  • juice of 1 lime
  • 250g Wok-Noodles (pre-cooking not needed)
  • 220g can bamboo shoots, drained
  • 2 handful of fresh coriander

Heat the oil in a pan and fry the onion until golden. Stir in the garlic, mushrooms and red peppers and fry for 3 minutes. Add the curry paste and cook for 1 minute. Stir in the stock, soy sauce and lime juice. Simmer for 5 minutes. Add the bamboo shoots, the noodles and most of the coriander. Cook noodles for 2-3 minutes until they are ready to eat. Serve while hot and sprinkle with the rest of the coriander.
