Avocado Cream Pasta (Vegan)

Hey everybody! I have a great new recipe to share.

Nowadays I’m so hooked to a webpage called Pinterest – have you heard about it or have an account there? It’s a page where you can find/share/add pictures from all over the internet and create your own boards with them. Since there is amazing stuff out there, in the world wide web, it can be addicting at times to look at all those pictures. Check out my account here, if you like.

Pinterest is a great source to find recipes. When I saw the pic of “Creamy Avocado Pasta” I had to add it to my “Food Board” and check out the recipe. It’s from a blog called “Oh She Glows” – such a lovely blog!

Yesterday I tried the recipe and it’s as good as it sounds. And it was prepared in no time! For that it doesn’t have any cream (all vegan) it is the most creamy pasta dish I ever ate. The recipe calls for lemon juice and lemon zest, but since my avocado cream allready had a strong lemon taste, I didn’t add the lemon zest. Next time I would take little less lemon juice and add the lemon zest instead.

So here is the recipe, adapted from “Oh She Glows”.

 

Avocado Cream Pasta

Serves 4

  • 2 ripe avocados, peeled and pitted
  • 1 lemon, juiced + lemon zest to garnish (don’t put all the lemon juice at once, it might be too much)
  • 3 garlic cloves (chopped), to taste
  • 1 tsp salt, or to taste
  • 1 big handful of fresh basil
  • 4 tbsp extra virgin olive oil
  • pepper, to taste
  •  4 servings of pasta
  • 2 tomatoes, cut in small cubes
Cook pasta in a big pot, while you prepare the avocado cream.
Mix garlic, olive oil and half of the lemon juice in a food processor. Add avocado, basil, salt and pepper and mix again. Add more lemon juice, salt and pepper to taste until the cream is to your liking. Once the pasta is cooked, mix it with the avocado cream and garnish with lemon zest and tomatoe cubes. Serve while still hot and enjoy the creaminess!  :-)
