Whole wheat waffles with oats topped with some chocolate spread and banana

Birthday Cooking

Last weekend we had a birthday to celebrate and I thought it would be a great occaision to try new recipes that I found on other blogs (except one from a cooking book). There are so many great food blogs out there and I’ve allready bookmarked so many recipes. So here are some pics of the food I cooked and the links to the blogs and recipe (just click on the blog name)…

Breakfast

Quinoa Fruit Salad

Quinoa Fruit Salad (Vegan)

I adapted this recipe from the blog Oh She Glows and loved it. For my salad I used apples, banana, figs and grapes and used agave sirup as a natural sweetener for the dressing.

Egg-in-a-hole Toast

This toast tasted as good as it looked like when I saw it on A Cozy Kitchen. I left out the ham and used organic eggs and gouda cheese from  Gut Wulksfelde.

If I didn’t top these waffles with a chocolate spread, they would’ve almost been healthy ;-) Check out the recipe from Lauren’s Latest. I replaced the milk with soy milk and it turned out great!

Dinner

Vietnamese spring rolls with peanut dip

Vietnamese spring rolls with peanut dip (Vegan)

Since I’ve tried spring rolls at our first visit at a vietnamese restaurant the other month, I’ve  been wanting to make them myself. I found this great recipe on PetitChef and fell in love with it. I will make them this weekend again and allready look forward to it! YUMMY!

Tofu in coconut sauce with rice

This is the tofu I used for it - very firm and a great replacement for the chicken in the recipe

This recipe is not from a blog but I thought I share the picture anyway. It originaly calls for chicken but that wouldn’t stop me from trying it – it tastes super good with tofu!! I found this great firm tofu that actually almost tastes like chicken to me (but then again, it’s been too long that I would still remember the real chicken taste ;-)) The sauce is made with coconut milk, ginger, lemongrass, onions, cashew nuts, sambal olek, lime juice and coriander. So good! If you want the recipe, just let me know ;-)

Have a great weekend everybody!
