Lately I’ve been cooking mainly plant based dishes and I learned that a great way to add creaminess to the dishes, is by using avocado instead of dairy products. Pasta goes together great with avocado! This recipe was allready a big hit at the lunch table.
Today I wanted to add mushrooms, which flavor I love! It tasted fantastic!
For 3 person
- 1 ripe avocado
- 2 handfull of mushrooms, quartered
- 1 small onion, finely chopped
- 2 tbsp olive oil
- salt and pepper
- wholewheat pasta for 3 people (about 300g)
Set the water for pasta to boil. Heat up olive oil in a pan and stir fry the onion. After 1-2 minutes add mushrooms and sauté on low heat. Meanwhile, cook pasta and prepare the avocado cream. Peel avocado, cut in large pieces and mix it in a food processor until creamy (you could also use a fork). Add salt and pepper to taste and mix with cooked pasta. Stir in the cooked mushrooms and serve while still hot.
