Watermelon-Strawberry-Mint Smoothie

June 20, 2014

Hey friends!

These days have been a bit stressful, since I’m about to finish my final thesis for university and I am starting to freak out a little. Just a few weeks left to the deadline! Nevertheless I’m trying my best to keep cool and most of all, not let the stress affect me in a negative way. Watching this interesting TED talk and reading this article really helped me to look at stress in another, more positive way. Instead of seeing it as something that hurts me and my health I now see stress as my little helper. Basically stress is nothing else than our bodys building up a lot of energy to get through a tough time. So stress is actually helping us, like a little power boost! That was quite a big realization for me because I’ve always looked at it the other way and stress made me feel worst than I felt anyway. Now I don’t see it as my enemy anymore. Next time you feel stressed, remember this and it might help you too!

While most of my thoughts are spinning around my final paper at the moment, I haven’t been feeling in the mood for cooking much these days. In fact I’ve had some pretty unhealthy days consisting of sandwiches and chocolate. Not good. But I’m now trying to change that again, because it makes me feel even worst. I feel more tired and my skin also doesn’t thank me when I eat too much sugar. Especially in a time like this, the body not only needs a mental boost (positive stress!) but also a nutritional boost.  So I’ll try to concentrate more on healthy (but quick) recipes from now until the dead line.

I already started to make more (green) smoothies again. In the morning I feel like they help me to wake up and be more focused.

Today I made a really tasty smoothie, that I wanted to share with you. It’s not green but it’s a perfect summer smoothie. Sweet and refreshing! You should definitely give it a try.

If you’re not using frozen strawberries, I would put the smoothie in the fridge for a while because this smoothie tastes best, when it’s cold.

And before you go, I would love to know, how you get through stressful times? Do you have any tricks that help you personally to keep your cool?

Watermelon-Strawberry-Mint Smoothie

(Makes 2 servings)

150g strawberries (I used frozen strawberries)

500g watermelon (measured without the skin)

1 handful fresh mint

Mix all ingredients in a blender and enjoy!
